Savoury muffins with salmon and dill

Make these unique muffins as an appetizer or a light evening meal and impress everybody!


  • 100 g smoked salmon
  • ½ cup finely chopped dill
  • 100 g grated Parmesan
  • 3 eggs
  • 2 cups plain flour
  • 1 tablespoon baking powder
  • ½ cup oil
  • ½ cup milk
  • ½ cup strained MEVGAL yogurt
  • 1 pinch dried thyme
  • Salt, pepper
  • Butter and flour for the moulds
  • Instructions

  • For the classic tzatziki: wash and dry the cucumber and finely dice.
  • Transfer to a colander, sprinkle with salt to taste. Mix well to coat with salt and leave for a few minutes to drain.
  • Squeeze out all the excess moisture and transfer to a bowl.
  • Add the yogurt, garlic, vinegar and olive oil and stir together with a spoon.
  • Adjust the seasoning and test for acidity, adding a little more vinegar, if necessary.
  • Lastly, add the finely chopped herb/s.
  • Mix together and chill in the fridge.
