Super simple and filling egg salad with herbs

Try having this egg salad as a light and healthy evening meal, or as a complete lunch accompanied by the meat or poultry of your choice!


  • 10 hard boiled eggs
  • ½ bunch spring onions, finely chopped
  • ½ bunch dill, finely chopped
  • 1 carrot, grated
  • 1 strained MEVGAL yogurt
  • ⅓ cup olive oil
  • 2 tsp honey
  • 2 Tbsp vinegar
  • Salt
  • Pepper
  • Instructions

  • Cut the eggs into small pieces or thin slices. Put the spring onions, dill and grated carrot in a large bowl and mix together. Add the eggs, salt and pepper and mix.
  • In another bowl, whisk together the olive oil, honey and vinegar. As soon as the ingredients are well combined, add the yogurt and mix thoroughly to form a dressing.
  • Pour over the eggs and toss to coat.
