Cauliflower Yogurt Dip

  • 1 cup of plain yogurt
  • 1 medium cauliflower
  • 25ml olive oil
  • 1 1/2 tbsp. pumpkin seed
  • 1/2 tsp. paprika
  • 1/2 tsp. coriander powder
  • 1/2 tsp. garlic powder
  • 1 tbsp cumin powder
  • salt
  • blue cheese for serving
  • Doritos chips for serving
  • Instructions

  • Spread the cauliflower florets on a baking tray with parchment paper and sprinkle them with olive oil. Add paprika, salt and 1 tbsp. pumpkin seed.
  • Bake in a preheated oven at 180 degrees, in the air, for 20 minutes.
  • Then cut them into small pieces and put them in a bowl.
  • Add the yogurt, coriander, garlic and cumin and mix until the mixture is homogeneous.
  • Grate the blue cheese on top by hand and add the rest of the pumpkin seeds.
  • Serve with doritos chips of your choice.
