Put the chopped figs in the freezer. This may be done a day or even months in advance.
30 minutes before preparing and serving the ice cream put the yogurt in the freezer and leave until it just starts to harden.
When the yogurt is ready, put it in a food processor with the frozen figs and honey and pulse 4-5 times maximum. Gently stir with a spoon and transfer into sundae glasses or small bowls.
The bowls of ice cream can be kept in the freezer for up to 30 minutes before serving.
