Pumpkin Muffin with Greek yogurt

Ingredients

  • 1 tbsp. butter, apple sauce or apple butter
    •
  • 1/2 cup honey or brown sugar
    •
  • 1 cup of pumpkin puree
    •
  • 1 egg white
    •
  • 1 teaspoon vanilla
    •
  • 1/2 cup mevgal authentic greek yogurt
    •
  • 1 cup all-purpose flour or wholemeal flour
    •
  • 1 tsp. baking soda
    •
  • 1/2 tsp. baking powder
    •
  • 1 tsp. cinnamon
    •

    Instructions

  • Preheat the oven to 180 degrees.

  • Beat the butter, sugar, pumpkin, egg, vanilla and yogurt until smooth.

  • Add the remaining ingredients until incorporated.

  • Once the dough is ready, fill the muffin tins in the pan with about a tablespoon of the dough.

  • Bake for 20-25 minutes.

  • Sprinkle with powdered sugar and enjoy the Halloween chills!!
