Posh Stuffed Eggs

Try these delicious stuffed eggs for a healthy, filling
breakfast or light evening meal. Perfect solution for a balanced diet for both
young and old alike!


  • 8 boiled eggs
  • ½ cup strained MEVGAL yogurt
  • 2 tsp mustard
  • ¼ cup capers
  • ¼ cup pickled gherkins
  • A bit of olive oil
  • Salt
  • Red and black pepper
  • Parsley or dill leaves
  • Instructions

  • Slice the eggs in half and remove the yolks. Blend the yolks in a food processor with all the remaining ingredients except the parsley and dill.
  • Fill the egg whites with the mixture and top with a little finely-chopped dill or parsley.
  • Serve cold.
