Put the lemons in a plastic container. Sprinkle the unrefined salt. Cover and leave it for 12 hours.
Steam cook the lemon slices for 5 minutes and then place the lemons in a glass bowl.
Cover with olive oil and stir the contents of the bowl and let marinade for 3 weeks. You may then keep this mix refrigerated for up to 2 months and it is a very aromatic mix ,ideal for marinating chicken and fish. You may also cut it into cubes and use in salads.
Use a frying pan and the olive oil to saute the chicken. When brown, add the onion and immediately afterwards the lemon and MEVGAL feta, diced. Cook for 5 minutes.
