For the whole grain bread: Put all the ingredients in a bowl and knead to a smooth, soft dough.
Turn the dough out onto a work surface and knead for 5’ until pliable. Form into a round. Gently press down the top to level out and transfer to an oiled baking sheet.
Dust with a little flour and bake the loaf on the bottom shelf of a preheated oven at 180 degrees Celsius, conventional setting, until lightly risen and nicely browned.
