Healthy bruschetta with MEVGAL Feta Cheese and vegetables

Try these fantastic bruschettas with feta and vegetables for the healthiest, lightest but also tastiest dinner for all ages!


  • 1 baguette
  • 200 g MEVGAL feta cheese
  • 1 small round aubergine
  • 1 small courgette
  • 2 tomatoes or 15 cherry tomatoes
  • 1 clove garlic
  • A few small basil leaves, roughly chopped
  • Olive oil, according to taste
  • Balsamic vinegar, according to taste
  • Instructions

  • Finely slice the aubergine and courgette and put in a Pyrex dish with a little salt and oil.
  • Bake in a preheated oven at 180 degrees Celsius until cooked (approximately 20 minutes depending on the type of oven).
  • Meanwhile cut the baguette into slices of the desired thickness and top each one with 1 Tbsp grated MEVGAL feta.
  • Remove the vegetables from the oven and put in the slices of bread for 10-15 minutes, or until the cheese has melted.
  • Finely chop the tomatoes, garlic and basil and add to the baked vegetables, when they have cooled a little.
  • Add oil and vinegar to taste and toss thoroughly to coat.
  • Remove the cheesy slices from the oven and top with a generous spoonful of the mixture.
